Ingredients

  • 1 Tbsp. butter
  • 1 Tbsp. vegetable oil
  • 1 large leek
  • 3 large garlic cloves
  • 1 small red bell pepper
  • 2 c. finely chopped broccoli
  • 2 c. finely chopped cauliflower
  • 1 large potato
  • 1 tsp. dried thyme
  • 1 tsp. salt
  • 1/2 tsp. white pepper
  • dash of cayenne pepper
  • 2 (14 1/2 oz.) cans chicken broth

Instructions

  1. Heat butter and oil in a soup pot over medium-low heat.
  2. Add the sliced leek and cook, covered, for 10 minutes until very soft.
  3. Add the minced garlic and cook for 5 minutes longer.
  4. Add diced red bell pepper, chopped broccoli, chopped cauliflower, potato, chicken broth, dried thyme, salt, white pepper, and cayenne pepper.
  5. Bring the mixture to a boil.
  6. Reduce heat to a simmer, cover, and cook for 35 minutes until the vegetables are very tender.
  7. Add evaporated skim milk and heat through before serving.
