Broccoli And Cauliflower Chowder

Ingredients
- 1 Tbsp. butter ⓘ
- 1 Tbsp. vegetable oil ⓘ
- 1 large leek ⓘ
- 3 large garlic cloves ⓘ
- 1 small red bell pepper ⓘ
- 2 c. finely chopped broccoli ⓘ
- 2 c. finely chopped cauliflower ⓘ
- 1 large potato ⓘ
- 1 tsp. dried thyme ⓘ
- 1 tsp. salt ⓘ
- 1/2 tsp. white pepper ⓘ
- dash of cayenne pepper ⓘ
- 2 (14 1/2 oz.) cans chicken broth ⓘ
Instructions
- Heat butter and oil in a soup pot over medium-low heat.
- Add the sliced leek and cook, covered, for 10 minutes until very soft.
- Add the minced garlic and cook for 5 minutes longer.
- Add diced red bell pepper, chopped broccoli, chopped cauliflower, potato, chicken broth, dried thyme, salt, white pepper, and cayenne pepper.
- Bring the mixture to a boil.
- Reduce heat to a simmer, cover, and cook for 35 minutes until the vegetables are very tender.
- Add evaporated skim milk and heat through before serving.
