Ingredients

  • 1 head broccoli
  • 2 Tbsp. salt
  • 4 cloves garlic
  • 1 lb. thin spaghetti or linguine
  • 3 qt. water
  • 1/2 c. olive oil
  • 1/4 c. Parmesan cheese
  • anchovies (optional)
  • fried bread crumbs (optional)
  • 1 tsp. black pepper

Instructions

  1. Separate broccoli florets and trim tough skins from stalks; cut up.
  2. Bring water and salt to a boil.
  3. Add broccoli and cook for 5 to 8 minutes.
  4. Add spaghetti cut in halves and cook until both are al dente.
  5. Drain the mixture.
  6. Heat olive oil in a pan and add garlic, browning it.
  7. Pour the garlic and oil mixture over the cooked spaghetti and broccoli.
  8. Add black pepper and Parmesan cheese.
  9. Serve with salad and crusty bread.
