Ingredients

  • 1 Tbsp. margarine
  • 1 tsp. margarine
  • 1/4 c. diced onion
  • 1 medium garlic clove
  • 4 c. broccoli florets
  • 4 oz. drained canned small white beans
  • 1/2 c. diced drained canned pimientos
  • 1/4 tsp. salt
  • 1/8 tsp. oregano leaves
  • 1/8 tsp. pepper

Instructions

  1. Preheat oven to 375°F.
  2. In a small skillet, heat 1 teaspoon of margarine until bubbly.
  3. Add diced onion and minced garlic; sauté until the onion is softened.
  4. In a mixing bowl, combine blanched broccoli florets, drained white beans, diced pimientos, salt, oregano, and pepper.
  5. Add the sautéed onion and garlic mixture to the bowl and stir to combine.
  6. Transfer the mixture to a greased baking dish.
  7. Sprinkle the coarsely shredded Cheddar cheese evenly over the casserole.
  8. In a small bowl, mix bread crumbs with the remaining margarine and sprinkle over the cheese.
  9. Bake in the preheated oven for about 20-25 minutes until bubbly and golden on top.
