Ingredients

  • 2 boxes Jiffy corn muffin mix
  • 3 eggs
  • 8 oz. cottage cheese
  • 2 c. frozen broccoli
  • 1 stick margarine
  • 1 c. shredded cheese

Instructions

  1. Cook broccoli according to package directions and drain well.
  2. Melt margarine in a 9 x 13-inch baking pan.
  3. Mix the corn muffin mix, eggs, cottage cheese, shredded cheese, and cooked broccoli.
  4. Pour the mixture over the melted margarine in the baking pan.
  5. Bake at 350°F for about 25 minutes until golden brown.
