  • 1 medium onion

Instructions

  1. Peel, slice, and place potatoes in a 6-quart pot with chopped onion.
  2. Pour enough water to just cover the potatoes.
  3. Cut broccoli flowerets off the stalk.
  4. Place broccoli flowerets on top of the potatoes.
  5. Add salt to the water and bring to a boil.
  6. Cook until potatoes and broccoli are tender.
  7. In a separate saucepan, melt margarine over medium heat.
  8. Add milk and shredded Cheddar cheese, stirring until cheese melts.
  9. Combine the cheese mixture with the cooked vegetables and broth.
  10. Season with black pepper and adjust salt if needed.
