Ingredients

  • 18 wonton skins
  • 1 Tbsp. melted butter or margarine
  • 1 egg
  • 3/4 cup chopped broccoli
  • 1/4 cup chopped red bell pepper
  • 1 cup shredded Cheddar cheese
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon pepper
  • 1/8 teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F.
  2. Spray miniature muffin pans with cooking spray.
  3. Brush one side of each wonton skin with melted butter.
  4. Carefully press each wonton skin into a muffin cup, butter-side up.
  5. In a medium bowl, beat the egg until blended.
  6. Stir in chopped broccoli, chopped red bell pepper, shredded Cheddar cheese, onion powder, pepper, and garlic powder.
  7. Spoon the mixture into the wonton shells.
  8. Bake at 350°F for 15 to 20 minutes or until the mixture is set and the wontons are golden brown.
  9. Immediately remove from the pan and serve.
