Ingredients

  • 1/2 medium onion, chopped
  • 1 Tbsp oil
  • 5 oz frozen broccoli
  • 1/2 stick margarine
  • 1 pkg Jiffy cornbread mix
  • 2 eggs
  • 6 oz cottage cheese

Instructions

  1. Fry chopped onion in oil until softened.
  2. Set the fried onion aside.
  3. Cook frozen broccoli as directed, then drain and set aside.
  4. Melt margarine.
  5. Grease an 8 x 8-inch pan.
  6. In a bowl, mix Jiffy cornbread mix and eggs.
  7. Add cottage cheese, broccoli, fried onions, and melted margarine to the mixture.
  8. Stir well to combine all ingredients.
  9. Pour the mixture into the greased pan and bake at 450°F for 20 to 25 minutes.
