Ingredients

  • 2 packages frozen chopped broccoli
  • 1 egg
  • 1/2 cup mayonnaise
  • salt and pepper to taste
  • 1 can cream of mushroom soup
  • 1 cup grated cheese
  • 1 tablespoon grated onion
  • 1/2 cup chopped peanuts
  • 1/2 cup buttered bread crumbs

Instructions

  1. Cook the frozen broccoli in salted water until tender, then drain.
  2. In a mixing bowl, combine the beaten egg, mayonnaise, cream of mushroom soup, 1/2 cup grated cheese, grated onion, and chopped peanuts.
  3. Add the cooked broccoli to the mixture and stir to combine.
  4. Transfer the mixture to a greased casserole dish.
  5. Top with the remaining 1/2 cup grated cheese and bread crumbs.
  6. Bake in a preheated oven at 350°F (175°C) for 20 minutes until golden and bubbly.
