Ingredients

  • 2 Jiffy corn bread mixes
  • 4 eggs
  • 2 sticks butter
  • 1 cup onions
  • 1 cup cottage cheese
  • 1 package broccoli or 2 cups chopped broccoli

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a round casserole dish.
  3. In a large mixing bowl, combine the two Jiffy corn bread mixes.
  4. Add the eggs, melted butter, chopped onions, cottage cheese, and broccoli (or chopped fresh broccoli).
  5. Mix until well combined.
  6. Pour the mixture into the prepared casserole dish.
  7. Bake at 350°F (175°C) for 45 minutes or until golden brown and cooked through.
  8. Remove from oven and let cool slightly before serving.
