Ingredients

  • 2 pkg. frozen broccoli
  • 2 eggs, beaten
  • 1 onion, chopped fine
  • 1 can cream of mushroom soup
  • 1/2 c. mayonnaise
  • 1 c. grated Cheddar cheese
  • 1/4 c. butter, melted
  • 1 pkg. herbed stuffing mix

Instructions

  1. Cook broccoli as directed and set aside.
  2. Cook herbed stuffing mix as directed and set aside.
  3. In a bowl, combine beaten eggs, chopped onion, cream of mushroom soup, and mayonnaise.
  4. Place a layer of cooked broccoli in a 2-quart casserole dish.
  5. Add a layer of grated Cheddar cheese over the broccoli.
  6. Pour a small amount of the egg mixture over the cheese.
  7. Repeat the layers until all ingredients are used, ending with a layer of stuffing mix on top.
  8. Pour melted butter over the top of the casserole.
  9. Bake at 350°F for 30 minutes.
