  • 1 onion, chopped
  • 1 pkg. bacon, fried and crumbled
  • 1 cup milk
  • 1 cup water

  1. Fry the bacon until crispy, drain the grease, and crumble into small pieces.
  2. Sauté the chopped onion in the bacon grease until translucent.
  3. In a separate pot, combine peeled potatoes, peeled and chopped carrots, and 1 cup water.
  4. Bring to a boil and cook until the potatoes and carrots are soft.
  5. Add the crumbled bacon, sautéed onions, 1 cup milk, and the can of cream of chicken soup to the pot.
  6. Cook until the mixture is hot but do not boil.
  7. Once heated through, stir in the shredded Cheddar cheese until melted and well combined.

Tips & Substitutions

For a creamier texture, consider using half-and-half instead of milk. You can also substitute the Cheddar cheese with a mix of Gruyère and Monterey Jack for a unique flavor. If you prefer a vegetarian version, omit the bacon and use vegetable broth instead of water. Additionally, adding some garlic powder or herbs like thyme can enhance the flavor.

Serving Suggestions

Serve Buddy's Tater Soup with crusty bread or a simple side salad to make it a complete meal. It pairs beautifully with Scalloped Chicken And Potatoes Dinner for a hearty family feast. For a garnish, sprinkle extra crumbled bacon and shredded cheese on top just before serving for an appealing presentation.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm the soup on the stovetop over medium heat, stirring occasionally to prevent sticking. If the soup thickens too much, add a splash of milk or water to reach your desired consistency.
