Ingredients
- 1 cup Crisco, melted ⓘ
- 1 cup sugar ⓘ
- 1 cup packed brown sugar
- 2 tablespoons milk ⓘ
- 1 teaspoon vanilla ⓘ
- 2 eggs ⓘ
- 2 cups flour ⓘ
- 1 teaspoon baking powder ⓘ
- 1/2 teaspoon salt ⓘ
- 1 teaspoon baking soda ⓘ
- 1 cup oats
- 1 cup crushed cornflakes ⓘ
- 1 cup semi-sweet chocolate chips
- 1/2 cup chopped pecans ⓘ
- 1/2 cup flaked coconut ⓘ
Instructions
- Preheat oven to 350°F.
- Grease a cookie sheet.
- Combine melted Crisco, sugar, brown sugar, milk, and vanilla in a large bowl. Beat at low speed until blended.
- Add eggs and beat at medium speed until blended.
- In a separate bowl, combine flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture at low speed.
- Stir in oats, crushed cornflakes, chocolate chips, chopped pecans, and coconut.
- Using a 1/4 cup measuring cup, drop the mixture onto the cookie sheet, 3 inches apart.
- Bake for 13 to 15 minutes or until lightly browned around the edges but still slightly soft in the center.
- Cool for 3 minutes on the cookie sheet before removing to a rack with a wide, thin pancake turner.
