Ingredients

  • 1 cup Crisco, melted
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup oats
  • 1 cup crushed cornflakes
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped pecans
  • 1/2 cup flaked coconut

Instructions

  1. Preheat oven to 350°F.
  2. Grease a cookie sheet.
  3. Combine melted Crisco, sugar, brown sugar, milk, and vanilla in a large bowl. Beat at low speed until blended.
  4. Add eggs and beat at medium speed until blended.
  5. In a separate bowl, combine flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the creamed mixture at low speed.
  7. Stir in oats, crushed cornflakes, chocolate chips, chopped pecans, and coconut.
  8. Using a 1/4 cup measuring cup, drop the mixture onto the cookie sheet, 3 inches apart.
  9. Bake for 13 to 15 minutes or until lightly browned around the edges but still slightly soft in the center.
  10. Cool for 3 minutes on the cookie sheet before removing to a rack with a wide, thin pancake turner.
