Ingredients

  • 1 cup sugar
  • 1 1/2 cups shortening
  • 2 cups molasses
  • 2 eggs
  • 10 or more cups plain flour
  • 2 teaspoons soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ginger
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1/2 cup boiling water
  • 1 quart sweetened applesauce

Instructions

  1. Cream sugar and shortening together.
  2. Add molasses and mix well.
  3. Beat in eggs until well combined.
  4. Mix dry ingredients with flour.
  5. Stir water and dry ingredients alternately into molasses-shortening mixture.
  6. Work in flour until you have a stiff dough.
  7. Roll the dough rather thin.
  8. Cut out layers using a dinner-sized plate or old-fashioned pie pan with scalloped edges.
  9. Bake the dough on a baking sheet or in layer cake pans at 375°F until fairly brown.
  10. For two cakes, bake four or five layers for each cake; for one large cake, bake six layers.
  11. When serving the large cake, cut through only three layers.
  12. Warm the applesauce slightly and spread between the layers of the cake.
  13. Avoid putting applesauce on the top layer.
