Ingredients

  • 2 large baking apples, peeled and sliced
  • 1 cup chopped rhubarb
  • 1 cup raspberries
  • 1 cup blueberries
  • 1 cup strawberries
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • Pie crust

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Combine peeled and sliced apples, chopped rhubarb, raspberries, blueberries, strawberries, sugar, and lemon juice in a bowl.
  3. Pour the fruit mixture into the prepared pie crust.
  4. Place a second pie crust on top of the fruit filling.
  5. Trim the top crust to be 1/2 inch larger than the pie dish, tuck it under the bottom crust edge, and crimp the edges.
  6. Cut slits in the top crust to allow steam to escape.
  7. Place the pie on a baking sheet and bake for 25 minutes at 400°F.
  8. Reduce the oven temperature to 350°F (175°C) and continue baking for an additional 30 minutes until golden brown.
