- Preheat oven to 400°F (200°C).
- Combine peeled and sliced apples, chopped rhubarb, raspberries, blueberries, strawberries, sugar, and lemon juice in a bowl.
- Pour the fruit mixture into the prepared pie crust.
- Place a second pie crust on top of the fruit filling.
- Trim the top crust to be 1/2 inch larger than the pie dish, tuck it under the bottom crust edge, and crimp the edges.
- Cut slits in the top crust to allow steam to escape.
- Place the pie on a baking sheet and bake for 25 minutes at 400°F.
- Reduce the oven temperature to 350°F (175°C) and continue baking for an additional 30 minutes until golden brown.
