Ingredients

  • 1 lb. dry pinto beans
  • 8 c. water
  • 1 3/4 lb. meaty ham bone or ham hocks
  • 1 medium onion, coarsely chopped
  • 1 clove garlic, minced
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 bay leaf
  • 1 (16 oz.) can tomatoes, cut up
  • 1 1/2 c. Burgundy wine
  • 1 (8 oz.) can tomato sauce
  • 2 Tbsp. brown sugar

Instructions

  1. Soak the pinto beans in water overnight.
  2. Alternatively, bring beans to a boil, then reduce heat and simmer for 2 minutes. Cover and let stand for 1 hour.
  3. Add the soaked beans, water, ham bone or ham hocks, chopped onion, minced garlic, salt, pepper, and bay leaf to a large pot. Bring to a boil.
  4. Reduce heat, cover, and simmer for 1 1/2 hours, stirring occasionally.
  5. Add the canned tomatoes, Burgundy wine, tomato sauce, and brown sugar. Continue to simmer until flavors meld and beans are tender.
