- Mix crushed cookies with 1/2 cup melted margarine.
- Press the mixture into a 9 x 13-inch pan to form a crust.
- Soften ice cream slightly and spread over the crust.
- Press Spanish peanuts into the ice cream with the back of a large spoon.
- Freeze until the ice cream is firm.
- In a medium saucepan, combine the remaining ingredients: 1/2 cup butter, 2/3 cup evaporated milk, 2 cups powdered sugar, 2/3 cup semi-sweet chocolate chips, and 1 teaspoon vanilla.
- Bring the mixture to a boil, stirring constantly.
- Boil and stir for 8 minutes, then remove from heat.
- Allow the sauce to cool thoroughly.
- Spread the cooled sauce over the ice cream layer.
- Freeze until the topping is firm, then serve.
