Butterless, Eggless, Milkless Fruit Cake

Ingredients

  • 1 cup sugar
  • 1 cup cold water
  • 1 cup seedless raisins
  • 3/4 cup lard
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup candied fruits
  • 1/2 cup chopped nutmeats
  • 2 cups sifted flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon soda
  • 1 tablespoon molasses

Instructions

  1. Put sugar, cold water, raisins, lard, cinnamon, cloves, nutmeg, and salt in a saucepan and boil for 3 minutes.
  2. Let the mixture cool.
  3. Add candied fruits, chopped nutmeats, sifted flour, baking powder, and soda dissolved in a little hot water and molasses to the cooled mixture.
  4. Mix well until combined.
  5. Pour the batter into a well-greased and floured cake pan.
  6. Bake in a 350°F oven for 30 to 45 minutes.
