Ingredients

  • 1 c. unbleached white flour
  • 1 c. corn meal
  • 1/2 c. sugar
  • 1/2 c. cornstarch
  • 1 Tbsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 egg
  • 1/4 c. butter, melted
  • 1 1/2 c. buttermilk

Instructions

  1. Combine flour, corn meal, sugar, cornstarch, baking powder, baking soda, and salt in a large bowl.
  2. Beat the egg in a smaller bowl and whisk in the melted butter slowly until well mixed.
  3. Whisk in the buttermilk. Pour the egg mixture into the dry ingredients, mixing until just blended.
  4. Gently spoon the mixture into a greased 9 x 5-inch loaf pan.
  5. Bake at 375° for 45 minutes or until a wooden pick inserted in the center of the loaf comes out clean.
