Butternut Squash Puree

Ingredients

  • 4 Tbsp. unmelted butter
  • 1 onion, peeled and thinly sliced
  • 1 butternut squash, peeled and cut into chunks
  • 1 white turnip, peeled and sliced
  • 2 ripe pears, peeled, cored and chunked

Instructions

  1. Melt butter in a heavy saucepan and sauté the sliced onion until soft.
  2. Add the peeled and chopped butternut squash, sliced turnip, and peeled, cored pears.
  3. Simmer, covered, until all ingredients are soft, about 15 minutes.
  4. Add water if needed to prevent sticking.
  5. Puree in a food processor until smooth.
  6. Season to taste and serve.
