Ingredients

  • sugar
  • vanilla extract
  • egg white
  • whole wheat cereal
  • ground cinnamon
  • cream of tartar
  • salt

Instructions

  1. Combine the egg white, vanilla extract, cream of tartar, salt, ground cinnamon, and sugar in a small mixing bowl; beat at high speed with an electric mixer until soft peaks form.
  2. Gradually add sugar, 1 tablespoon at a time, beating until the sugar dissolves.
  3. Stir in crushed whole wheat cereal.
  4. Drop by level tablespoons onto a lightly greased cookie sheet.
  5. Make an indentation in the center of each with your thumb.
  6. Place 3 peanut candies in each indentation.
  7. Bake at 275°F (135°C) for 30 minutes, or until set.
  8. Remove quickly onto a wire rack to cool.
