Cabbage Soup (Diet)

Ingredients

  • 1/2 head cabbage, shredded
  • 1 can French-style green beans
  • 1 can mushrooms with liquid (optional)
  • 3 stalks celery, chopped
  • 3 c. tomato juice
  • carrots (optional)
  • onion flakes (optional)
  • 2 to 3 beef bouillon cubes
  • salt and pepper to taste
  • 2 c. powdered nonfat milk
  • 3/4 c. cornstarch
  • 1/4 c. or less instant chicken bouillon
  • 2 Tbsp. dried onion flakes
  • 1 tsp. basil leaves

Instructions

  1. Combine all ingredients, mixing well.
  2. Store in airtight container until ready to use.
  3. To substitute for one can of condensed soup, combine 1/3 cup dry soup mix with 1 1/4 cups of cold water in a saucepan.
  4. Cook and stir until thickened.
  5. Add to casseroles as you would the canned product.
  6. Makes equivalent of 9 cans of soup.
  7. Calories 131, fat 1 g, sodium 728 mg and fiber trace.
