Cabbage Soup(Lo-Cal)
Ingredients
- 5 c. shredded cabbage (about 1 lb.) ⓘ
- 1 sliced carrot ⓘ
- 1 sliced zucchini ⓘ
- 1 large tomato, coarsely diced ⓘ
- 1/2 green pepper, sliced ⓘ
- 1 onion, sliced ⓘ
- 2 cloves garlic, finely chopped ⓘ
- 1 Tbsp. tomato paste ⓘ
- 1 Tbsp. frozen apple juice ⓘ
- 1/4 tsp. cayenne pepper ⓘ
- juice of 1/2 lemon ⓘ
- 1/2 tsp. basil ⓘ
- 1/2 tsp. oregano ⓘ
Instructions
- Put all ingredients in a large soup pot with 8 cups water; heat to boiling.
- Reduce heat.
- Cover and simmer for 50 minutes.
