Ingredients

  • 2 Tbsp. butter
  • 1 c. thinly sliced carrots
  • salt to taste
  • pepper to taste
  • 1 c. chopped celery
  • 1 chopped bell pepper
  • 2 fresh tomatoes
  • 1 tsp. sugar
  • 1/2 c. chopped onion

Instructions

  1. Melt butter in a skillet over medium heat.
  2. Add sliced carrots, chopped celery, chopped bell pepper, chopped onion, salt, pepper, and sugar.
  3. Cover and cook until vegetables are tender, about 15-20 minutes.
  4. Add chopped tomatoes and cook uncovered for an additional 5 minutes, allowing excess moisture to evaporate.
