Ingredients

  • 1/2 cup rice
  • 2 cups brewed coffee
  • 3 tablespoons butter
  • 3 beaten eggs
  • 1/2 cup dark corn syrup
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 1/2 cups milk
  • 1/2 teaspoon cinnamon

Instructions

  1. Cook rice, brewed coffee, and butter in a double boiler for about 25 minutes.
  2. Combine all ingredients, except cinnamon; pour into a 1 1/2-quart casserole dish.
  3. Sprinkle with cinnamon.
  4. Set casserole in a pan of warm water.
  5. Bake at 350°F for about 1 hour.
  6. Turn off heat; let stand in oven for 30 minutes.
  7. Serve warm with whipped cream.
