Ingredients

  • 6 small catfish, cleaned and dressed
  • 1 tsp. salt (optional)
  • 1/4 tsp. fresh black pepper
  • 1 (2 oz.) bottle hot sauce
  • 1/4 tsp. salt and pepper
  • 2 c. cornmeal (self-rising)

Instructions

  1. Combine salt, pepper, and hot sauce to create a marinade.
  2. Season catfish with salt and pepper to taste and marinate for 2 hours in refrigerator.
  3. Put cornmeal into a paper bag.
  4. Drop catfish in the bag, one at a time, and shake until fish are completely coated.
  5. Fry fish in deep, hot olive oil (375°F) until fish floats to surface and are golden brown.
  6. Drain on paper towels and serve hot.
