  2. In a large saucepan, combine water, onions, leeks, potatoes, celery, green pepper, clams, salt, pepper, thyme, bay leaves, Tabasco, sherry, and clam juice.
  3. Simmer until potatoes are thoroughly cooked.
  4. Stir the butter-flour mixture into the chowder and stir until thick.
  5. Remove the chowder from heat.
  6. Stir in the half and half until blended.
  7. Heat to serving temperature, stirring occasionally.
