Ingredients

  • 2 cans chili hot beans
  • 1 bell pepper, minced
  • 1 lb. crawfish or shrimp
  • 1 kielbasa sausage
  • Tony Chachere seasoning
  • 3 Tbsp. bacon fat

Instructions

  1. Make a roux by heating bacon fat and adding flour, then brown slowly until the color of chocolate.
  2. Set aside the roux.
  3. Saute onion and bell peppers in butter.
  4. Cut up sausage and crab meat.
  5. Combine all ingredients in a large pot.
  6. Heat the mixture, then stir in the roux.
  7. Cover and cook slowly for about 4 hours.
  8. Add seasonings to taste.
  9. Serve over rice.
