Ingredients

  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 2 stalks celery, chopped
  • 1 carrot, finely chopped
  • 8 ripe tomatoes or 1 large tomato
  • 28 oz. can chopped tomatoes
  • 1 Tbsp. olive oil
  • 1 lb. pasta (penne or ziti)
  • Parmesan cheese
  • 1 tsp. oregano
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. salt

Instructions

  1. Brown the chopped onion, green pepper, celery, and carrot in olive oil until soft and slightly browned.
  2. Add the chopped tomatoes or large tomato, along with oregano, cayenne pepper, and salt.
  3. Simmer on low until flavors meld and sauce thickens.
  4. Cook pasta according to package instructions, then combine with the sauce and serve topped with Parmesan cheese.
