- Remove skin and fat from the chicken.
- Combine flour, black pepper, red cayenne pepper, garlic, and salt to make a seasoned flour mixture.
- Roll the chicken in the seasoned flour until well coated.
- Fry the coated chicken in oil and butter until cooked through and browned.
- Remove the chicken from the pan and debone.
- Remove all but 2 to 3 tablespoons of the remaining oil in the pan.
- Leave all the blackened flour and chicken in the pan.
- Saute chopped onion and green pepper in the pan until the onions are clear.
- Combine shredded chicken, chopped vegetables, rice (if using), chicken broth, and sliced Polish sausages in a kettle and simmer.
- Adjust the flavor with additional cayenne pepper and black pepper to taste.
- Ten minutes before serving, add the tomato wedges to the dish.
