Ingredients

  • 1 chicken
  • 2 Polish sausages
  • 1 green pepper
  • 1 onion
  • 2 cans chicken broth
  • 2 to 3 fresh tomatoes
  • Rice
  • Flour
  • Black pepper
  • Red cayenne pepper
  • Garlic
  • Salt

Instructions

  1. Remove skin and fat from the chicken.
  2. Combine flour, black pepper, red cayenne pepper, garlic, and salt to make a seasoned flour mixture.
  3. Roll the chicken in the seasoned flour until well coated.
  4. Fry the coated chicken in oil and butter until cooked through and browned.
  5. Remove the chicken from the pan and debone.
  6. Remove all but 2 to 3 tablespoons of the remaining oil in the pan.
  7. Leave all the blackened flour and chicken in the pan.
  8. Saute chopped onion and green pepper in the pan until the onions are clear.
  9. Combine shredded chicken, chopped vegetables, rice (if using), chicken broth, and sliced Polish sausages in a kettle and simmer.
  10. Adjust the flavor with additional cayenne pepper and black pepper to taste.
  11. Ten minutes before serving, add the tomato wedges to the dish.
