Ingredients

  • 3 large white potatoes
  • 1/2 cup margarine
  • 1/2 cup whipping cream
  • 1 teaspoon Cajun seasoning
  • 2 tablespoons white onion, finely chopped
  • 1 pound Cajun sausage, browned
  • 1 cup grated Cheddar cheese

Instructions

  1. Bake potatoes at 325°F until you can easily pierce with a fork, about 1 1/2 hours.
  2. Cut the potatoes lengthwise and scoop out the pulp, leaving enough to hold the shells firmly together.
  3. Whip the potatoes with margarine, whipping cream, Cajun seasoning, chopped onions, browned Cajun sausage, and grated Cheddar cheese.
  4. Refill the potato shells with the mashed mixture.
  5. Reheat at 400°F for 20 to 25 minutes before serving.
