Ingredients

  • 4 eggs, separated
  • 3/4 c. confectioners sugar
  • 10 Tbsp. water
  • 1 3/4 c. flour*
  • grated lemon rind (optional)

Instructions

  1. Beat egg yolks, confectioners sugar, and water until very light and foamy.
  2. Whip egg whites with a pinch of salt and a teaspoon of water until stiff peaks form.
  3. Gradually fold in 3 teaspoons of confectioners sugar into the stiff egg whites until glossy.
