Ingredients

  • 1 to 1.5 lb. halibut
  • 1 medium onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 Tbsp. oil
  • chili pepper to taste
  • salt
  • pepper

Instructions

  1. Slice the onion and bell peppers into strips.
  2. Heat oil in a skillet over medium-high heat.
  3. Add the onions and bell peppers to the skillet and cook until tender, about 5 minutes.
  4. Season the vegetables with chili pepper, salt, and pepper to taste.
  5. Cut the halibut into strips and add to the skillet, cooking until the fish is cooked through, about 5 minutes.
  6. Serve the fish and vegetables in warm tortillas with optional toppings such as salsa, sour cream, diced tomatoes, grated cheese, refried beans, lime wedges, and guacamole.
