Ingredients

  • 1/2 cup butter or margarine
  • 1 medium onion, chopped
  • 1/2 cup flour
  • 1/2 teaspoon dry mustard (optional)
  • 3 cups milk
  • 1/2 teaspoon salt
  • 1/2 pound Cheddar cheese, shredded
  • 3 cups cubed, cooked ham (turkey ham can be used)

Instructions

  1. Melt the butter in a large pan over moderate heat.
  2. Add the chopped onion and cook until soft.
  3. Stir in the flour and dry mustard (if using).
  4. Cook over moderate heat, stirring occasionally.
  5. Gradually add the milk, cooking and stirring until the mixture thickens.
  6. Add salt and shredded cheese, cooking until the cheese melts.
  7. Fold in the cooked, cubed ham and uncooked vegetables.
  8. Spoon the mixture into a 9 x 13-inch baking dish.
  9. Cool slightly at room temperature, then refrigerate covered overnight to allow flavors to blend.
  10. Let stand at room temperature for 45 minutes before baking.
  11. Sprinkle the top with bread cubes.
  12. Bake at 350°F (175°C) for 40 minutes until golden and bubbly.
