Ingredients

  • 3 1/4 cups broccoli flowerets
  • 1/4 cup chopped green onion
  • 1/4 cup chopped pimento
  • 3 eggs
  • 1 cup evaporated skim milk
  • 1/2 cup fat-free cottage cheese
  • 3 tablespoons Parmesan cheese
  • 3 tablespoons dry sherry
  • 3/4 teaspoon Italian mixed herbs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F.
  2. Steam broccoli, green onion, and pimento in a 2-quart casserole dish sprayed with nonstick spray.
  3. In a blender or food processor, combine the eggs, evaporated skim milk, cottage cheese, Parmesan cheese, dry sherry, Italian mixed herbs, salt, and pepper.
  4. Pour the blended mixture over the steamed vegetables.
  5. Bake for 35 minutes or until a knife inserted in the center comes out clean.
