  • 4 shallots or chives, chopped
  • 1/4 tsp. thyme
  • 1 whole chilli (optional)
  • 12 young okras
  • 8 oz. crab meat

Instructions

  1. Remove thick stems from callaloo or spinach, chop roughly, and place into a saucepan with all ingredients except okras and crab.
  2. Cover and simmer until the meat is tender.
  3. Add okras; cook for 8 minutes.
  4. Remove pepper, then blend the soup until smooth.
  5. Add crab meat, reheat, and adjust seasonings.
  6. Serve piping hot with slices of avocado and hot bread.
