Ingredients

  • 12 oz. cooked beef
  • 1/3 cup plain yogurt
  • 2 Tbsp. mayonnaise
  • 1/4 tsp. ground ginger
  • 10 oz. cooked and chilled asparagus
  • 2 medium peeled oranges
  • 1 small red onion
  • 1/4 cup toasted sliced almonds

Instructions

  1. Combine the yogurt, mayonnaise, and ground ginger in a bowl.
  2. Cover and refrigerate the dressing.
  3. Cut cooked and chilled asparagus into 1-inch strips.
  4. Slice oranges into 1/2-inch thick slices and cut into quarters.
  5. Separate red onion slices into rings.
  6. Combine onion rings with the asparagus in a bowl.
  7. Place lettuce on a serving platter.
  8. Arrange orange wedges and asparagus pieces alternately on the lettuce.
  9. Place beef strips in the center of the platter.
  10. Sprinkle toasted sliced almonds over the beef.
  11. Serve the salad chilled with the dressing on the side.
