Ingredients

  • 1 (10 oz.) can refrigerated pizza crust
  • 1 cup shredded reduced-fat Mozzarella cheese
  • 1 cup frozen bell pepper and onions, thawed and patted dry
  • 32 slices pepperoni
  • 1 cup part-skim Ricotta cheese

Instructions

  1. Preheat oven to 425°F and coat a baking sheet with nonstick spray.
  2. Unroll the refrigerated pizza crust onto a cutting board and stretch it into a 12-inch square.
  3. Cut the dough into four 6-inch squares.
  4. Place each square on the prepared baking sheet.
  5. Spread a layer of ricotta cheese on one side of each square, leaving a border around the edges.
  6. Distribute shredded mozzarella, thawed bell peppers and onions, and pepperoni over the ricotta on each square.
  7. Fold each square in half to form a half-moon shape and press the edges to seal.
  8. Bake in the preheated oven for 12-15 minutes or until golden brown.
  9. Remove from oven and let cool slightly before serving.
