Ingredients

  • 4 slices bacon
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped onion
  • 1 can cream of chicken soup
  • 8 eggs, slightly beaten
  • dash of pepper

Instructions

  1. Cook bacon until crisp. Crumble and set aside.
  2. Reserve 2 tablespoons of bacon drippings.
  3. Cook green pepper and onion in the bacon drippings until tender.
  4. In a bowl, stir the cream of chicken soup until smooth.
  5. Gradually blend in the beaten eggs and pepper.
  6. Pour the egg mixture into the skillet with vegetables.
  7. Cook over low heat, lifting cooked portions until eggs are completely set.
  8. Garnish with crumbled bacon before serving.
