Canton Chicken features tender chicken strips stir-fried with fresh vegetables and a savory soy-garlic sauce, perfect for a quick, flavorful Chinese-inspired meal for family or friends.

Ingredients

  • 1/2 lb boneless chicken breast
  • 2 Tbsp cornstarch
  • 3 Tbsp soy sauce
  • 1 garlic clove
  • 2 Tbsp oil
  • 1 medium onion
  • 3/4 c water
  • 16 oz Birds Eye cauliflower, baby whole carrots and snow peas
  • 1/2 tsp ginger

Instructions

  1. Place chicken in a bowl.
  2. Combine 1 tablespoon each of cornstarch and soy sauce; add minced garlic.
  3. Pour over chicken, mixing to coat well.
  4. Let stand for 15 minutes.
  5. Heat 1 tablespoon of oil in a skillet; add chicken and stir-fry over high heat for 2 minutes until golden brown.
  6. Remove chicken from skillet.
  7. Heat remaining oil in the same skillet; add sliced onion and stir-fry for 2 minutes.
  8. Add 3/4 cup water and the frozen vegetables to the skillet.
  9. Bring to a boil, then reduce heat and simmer for 2 minutes.
  10. In a bowl, combine remaining water, cornstarch, soy sauce, ginger, sugar, and vinegar.
  11. Pour the sauce into the skillet, add the cooked chicken, and cook while stirring until thickened, about 2 minutes.
