Ingredients

  • 2 eggs
  • 1/8 tsp white pepper
  • 1/4 cup soy sauce
  • 1/4 cup vegetable oil
  • 1 slice ginger, minced
  • 1 clove garlic, minced
  • 4 cups cooked rice
  • 4 scallions, chopped
  • 2 cups diced cooked meat
  • 1/2 cup chopped mushrooms

Instructions

  1. Place eggs, white pepper, and soy sauce in a small bowl.
  2. Stir slightly and set aside.
  3. Heat wok or pan until hot and dry.
  4. Add vegetable oil to the wok or pan.
  5. Brown garlic and ginger slightly, then add cooked rice.
  6. Cook for 2 to 3 minutes, stirring to break up lumps.
  7. Add diced cooked meat and chopped mushrooms.
  8. Fry and stir constantly until thoroughly heated.
  9. Add the egg mixture while stirring rice so it will cover as much as possible.
  10. Stir constantly while cooking until egg mixture begins to firm, about 2 minutes.
  11. Serve hot.
