Ingredients

  • 1/4 lb. salt pork, diced
  • 2 onions, diced
  • 7 potatoes, diced
  • 1 qt. cooked clams or quahogs
  • 2 Tbsp. flour
  • 3 slices bacon
  • 1/4 cup cold water
  • 2 Tbsp. butter
  • 1 quart milk
  • 2 tsp. salt

Instructions

  1. Fry bacon until crisp and cut into small pieces.
  2. Remove bacon from the pan and set aside.
  3. Fry salt pork until golden brown and remove from the pan.
  4. Saute diced onions until soft.
  5. Drain clams, saving the juice, then chop the clams finely.
  6. Add enough water to the clam juice to make 3 cups, then bring to a boil.
  7. Add diced potatoes, browned salt pork, onions, and bacon to the boiling liquid.
  8. Simmer until the potatoes are done, about 15 minutes.
  9. Blend flour with cold water to form a smooth paste, then add to the soup, stirring until it boils and thickens.
  10. Add chopped clams and season with salt.
  11. Slowly add the milk, stirring constantly to incorporate.
  12. Add 2 tablespoons of butter just before serving.
