A moist, tangy cranberry bread with bright orange flavor, perfect for holiday mornings or brunch, combining fresh cranberries and optional nuts for added texture.

Ingredients

  • 1 1/2 cups fresh cranberries
  • 2 cups sifted flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup orange juice
  • 1 egg
  • 1/4 or 1/2 stick oleo

Instructions

  1. Wash, drain cranberries and set aside.
  2. Mix the flour, sugar, baking powder, soda, and salt; set aside 2 tablespoons of this mixture.
  3. Cut oleo into the flour mixture until crumbly.
  4. Beat together the orange juice and egg, then add to the flour mixture and mix well.
  5. Put 2 tablespoons of flour into a sack, add cranberries, and shake to coat.
  6. Gently fold the coated cranberries into the batter.
  7. Pour batter into a greased and floured loaf pan.
  8. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan, then remove and serve.
