Ingredients

  • 16 cups popped popcorn
  • 1 cup packed brown sugar
  • 1 stick butter or margarine
  • 1/4 cup light corn syrup
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

Instructions

  1. Put popped popcorn into a sprayed large brown paper bag.
  2. Mix brown sugar, butter, light corn syrup, and salt in a 2-quart batter bowl.
  3. Microwave, uncovered, on High for 2 1/4 minutes.
  4. Stir the mixture.
  5. Microwave until boiling, about 1 minute, then boil for 3 minutes.
  6. Stir in baking soda and vanilla.
  7. Pour the caramel syrup over the popped popcorn in the bag.
  8. Mix and shake well to coat the popcorn with caramel.
  9. Microwave on High for 2 to 3 minutes, shaking the bag well after each minute.
  10. Cool the caramel corn.
  11. Stir occasionally as it cools.
  12. Leave the caramel corn in the bag to cool completely.
  13. Squeeze the bag occasionally as the caramel cools to help separate the kernels.
