- Mix brown sugar, butter, light corn syrup, and salt in a 2-quart batter bowl.
- Microwave, uncovered, on High for 2 1/4 minutes.
- Stir the mixture.
- Microwave until boiling, about 1 minute, then boil for 3 minutes.
- Stir in baking soda and vanilla.
- Pour the caramel syrup over the popped popcorn in the bag.
- Mix and shake well to coat the popcorn with caramel.
- Microwave on High for 2 to 3 minutes, shaking the bag well after each minute.
- Cool the caramel corn.
- Stir occasionally as it cools.
- Leave the caramel corn in the bag to cool completely.
- Squeeze the bag occasionally as the caramel cools to help separate the kernels.
