Ingredients

  • 1/3 cup sugar
  • 1 1/2 cups boiling water
  • 3 egg yolks
  • 2 tablespoons sugar
  • 3 cups milk
  • 3/4 cup light cream
  • dash of salt

Instructions

  1. In a heavy skillet over medium heat, caramelize 1/3 cup sugar until it becomes an amber-colored liquid.
  2. Gradually pour in 1 1/2 cups boiling water and stir until sugar dissolves.
  3. Chill the caramelized mixture in a mixing bowl.
  4. Beat 3 egg yolks until thick and lemon-colored; add 2 tablespoons sugar.
  5. Gradually add 3 cups milk, beating at low speed.
  6. Add 3/4 cup light cream and a dash of salt, then mix in the caramelized sugar.
  7. Beat at low speed until all ingredients are combined.
  8. Pour into serving glasses and top each with a scoop of vanilla ice cream.
