Ingredients

  • 1 cup uncooked old fashioned oatmeal
  • 1 1/2 cups hot water
  • 1/2 cup shortening
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 1/2 cups flour
  • 1 teaspoon soda
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 1/2 teaspoon salt
  • 2 eggs

Instructions

  1. Mix uncooked old fashioned oatmeal with hot water and set aside to soak.
  2. Cream shortening, brown sugar, and white sugar together until well combined.
  3. Beat in the eggs one at a time until smooth.
  4. Add the soaked oatmeal to the creamed mixture.
  5. In a separate bowl, whisk together flour, soda, baking powder, cinnamon, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Pour the batter into a greased baking pan.
  8. Bake at 350°F (175°C) for 30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool slightly before serving.
