A comforting sweet potato casserole with pineapple and marshmallows, perfect for holidays or family gatherings, blending sweetness and cinnamon warmth for all to enjoy.

Ingredients

  • 17 oz. can sweet potatoes
  • 2 Tbsp. brown sugar
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 egg
  • 3 Tbsp. melted margarine
  • 8 oz. can crushed pineapple, drained
  • 2 c. miniature marshmallows

Instructions

  1. Combine sweet potatoes, brown sugar, salt, cinnamon, beaten egg, melted margarine, and drained crushed pineapple in a large bowl. Mix well.
  2. Place half of the mixture in a greased casserole dish.
  3. Spread 1 cup of miniature marshmallows evenly over the mixture.
  4. Add the remaining mixture on top of the marshmallows.
  5. Bake at 350°F (175°C) for 30 minutes.
  6. Remove from oven and add the remaining marshmallows on top.
  7. Bake for an additional 10 minutes until marshmallows are golden.
