Carolina Cornish Hens

Ingredients

  • 3 rock Cornish hens
  • 1/4 lb. bulk hot sausage
  • 1 1/4 cups water
  • 1/4 cup melted currant jelly
  • 2 Tbsp. butter or margarine
  • 1 (6 oz.) pkg. long grain and wild rice
  • 1 cup dry white wine

Instructions

  1. Cut the Cornish hens in half lengthwise.
  2. In a large skillet, brown the hens in butter over all sides.
  3. Remove the hens from the skillet and drain off drippings.
  4. Brown the hot sausage in the skillet, then remove and drain on paper towels.
  5. Pour off the drippings from the skillet.
