Ingredients

  • 3/4 cup oil
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon soda
  • 1 cup grated raw carrot
  • 1/2 cup chopped nuts
  • 1/2 cup chopped dates
  • 1/2 cup raisins

Instructions

  1. Beat oil and sugar together until well combined.
  2. Add eggs and beat well.
  3. Add the mixed dry ingredients to the wet mixture and stir until just combined.
  4. Fold in grated carrot, chopped nuts, chopped dates, and raisins.
  5. Pour batter into a lightly greased and floured 9 x 5-inch bread pan.
  6. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted into the center comes out clean.
