- Melt butter in a saucepan over low heat.
- Add carrots and onions, cover, and cook until vegetables soften, about 15 minutes, stirring occasionally.
- Mix in ginger and ground coriander.
- Add 2 cups of chicken broth, re-cover, and simmer until carrots are very tender, about 20 to 30 minutes.
- Puree the soup until smooth using a blender, food processor, or potato masher.
- Stir in half and half and remaining broth.
- Season with salt and pepper if desired.
- Serve garnished with parsley or cilantro.
