Ingredients

  • 6 Tbsp. unsalted butter
  • 2 lb. carrots, thinly sliced
  • 2 large onions, chopped
  • 6 Tbsp. fresh ginger, peeled and minced
  • 1/2 tsp. ground coriander
  • 6 c. chicken broth
  • 1 c. half and half

Instructions

  1. Melt butter in a saucepan over low heat.
  2. Add carrots and onions, cover, and cook until vegetables soften, about 15 minutes, stirring occasionally.
  3. Mix in ginger and ground coriander.
  4. Add 2 cups of chicken broth, re-cover, and simmer until carrots are very tender, about 20 to 30 minutes.
  5. Puree the soup until smooth using a blender, food processor, or potato masher.
  6. Stir in half and half and remaining broth.
  7. Season with salt and pepper if desired.
  8. Serve garnished with parsley or cilantro.
