Ingredients

  • 1/2 cup sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1 large egg
  • 1 cup shredded carrot
  • 1/2 cup canned pineapple in juice
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Sift together the all-purpose flour, sugar, baking powder, baking soda, cinnamon, and salt into a mixing bowl.
  2. Add the vegetable oil, egg, shredded carrots, crushed pineapple with juice, and vanilla extract.
  3. Mix until moistened; beat for 2 minutes at medium speed on an electric mixer.
  4. Spray an 8 x 8 x 2-inch baking pan with nonstick spray coating.
  5. Pour the batter evenly into the prepared pan.
  6. Bake in a 350°F oven for 20 to 25 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool on a wire rack.
  8. Frost with Light Cream Cheese Topping.
